Asian recipes for a low cost meal
Meats and vegetables are used in endless ways in Chinese cuisine. Cantonese dishes use lots of low cost natural ingredients, steamed or stir-fried over high heat and flavored with just a little soy sauce, ginger or spring onion. Try these two dishes.
Stir Fry Sweet & Sour Chicken
- 3 boneless skinless chicken breast
- sesame seeds (optional)
- 1 green bell pepper (julienned)
- 1 clove of garlic (chopped)
- 2 1/2 tbsp. of coconut oil
- 1 jar of La Choy sweet and sour sauce
Cube chicken into desired chuncks; set aside. Heat oil until melted over low heat. Add sesame seeds and chopped garlic, stir to mix together, turn up heat to med-hi, and add chicken.
Stir fry until chicken is thoroughly cooked, then add bell pepper and sweet and sour sauce. Stir and turn down heat to low.
Cover and simmer for about 10 minutes until bell pepper is soft and tender. Serves 2-3.
Honey Garlic Chicken Wings
- 1/2 cup liquid honey
- 1/4 cup lemon juice
- 1/4 cup water
- 3 tbsp ketchup
- 1 1/2 tsp garlic powder
- 1/2 tsp garlic salt
- 1 tsp ground ginger
Combine all ingredients in sauce pan. Heat to boiling and simmer for 5 minutes.
Place 3 lbs chicken wings separated into a 9x13 baking dish. Pour sauce over wings. Marinate for 2 hrs.
Bake at 400 F for 1 hour, turning once.
